▲ Food On The Go Project ▲ :: RICE NOODLES & ZOODLES with the help of GEFU SPIRELLI ::



So, I while ago I got this great Gefu spirelli vegetable spiralizer and since then I am hooked on it. I love that you can make veggie spaghetti. I don't know how it happened that I didn't know about it, but it's freakin' amazing! I love the age I live in, cuz everything is possible! Yes, you heard me, I'm so excited about this! (haha, this came to my mind. Listen to it, it's catchy).
Anyhow, it's easy to use, you have your veggies ready in seconds + you don't need much to clean it. The downside would maybe be the leftovers of vegetable that you can 't "noodle", but I just chop the remainder of the vegetable when it becomes difficult and use it in a different way, so there's no waste of food. 
+ btw, all the Slovenian readers, if you feel the need of having a Gefu spirelli in your kitchen, you can buy it at 1001 dar. Honestly, you won't regret it. 

So, let's see what I made with this wonder maker. On the photo above you can see spiralized carrots and zucchini. I used them in the dish below.

RICE NOODLES WITH VEGETABLE, SHRIMPS AND CASHEWS 

You will need:
  • Rice Noodles
  • Cashews 
  • 1 large size carrot or 2 medium ones
  • 1/2 zucchini
  • 1 onion
  • Shrimps
  • salt, pepper, garlic, herbs of your choice, soy sauce!

Spiralize carrots and zucchini (or just chop them if you don't have spiralizer, or cut them into thin slices). In a pan, start with melting a bit of coconut butter, then first saute onion for a couple of minutes until it starts smelling nice, then add carrots, saute a bit, add zucchini, cashews and shrimps. Saute for another 3-4 minutes (don't forget to stir it from time to time), then add a lil bit of water and leave it a bit, so it gets a bit softer. Don't forget on salt, pepper, garlic, herbs of your choice and of course Soy sauce, that makes everything taste better. In the end, you can chop a bit of cashews for the decoration. Smell it and pack it, because this is your lunch for tomorrow. It's 10pm and it's definitely too late for you to eat dinner at this hour. ;) That's why we call it a "Food on the go project". Congrats if you made this in the afternoon, cuz that means you can enjoy it two times. ;) (now it's time to play this.)



This second dish was from today and If I'm totally honest, it looked so good I ate everything, nothing left for tomorrow. That's bad, cuz I need to make something else now, but totally worth it, cuz my tummy said it was yummy! (or Feelin' Way To Damn Good) ;)


ZOODLES WITH ROASTED TOMATO, FRESH BASIL and PARMESAN 

You will need (for the portion below):
  • 1 large zucchini 
  • a couple of cherry tomatoes
  • leaves of fresh basil
  • small onion
  • parmesan (as much as you love)
  • salt, pepper, 1 tbs of honey, juice of 1/2 lime, soy sauce (i know it might sound weird but I kind of liked the combination).

I wanted to make garlic zoodles, but I had no garlic at home (Damn), so I went in other direction.
Using a spiralizer create zoodles (zucchini spaghetti). I used wok for this dish, seemed appropriate. 
Heat one tbs of coconut butter (or whatever you use) over medium-high heat. Once hot, add noodles, cook for about 3-4 minutes so it softens a bit, but keeps the crunchiness. Transfer zoodles to a colander and dry the wok (remove the water/sauce that might stayed in). Again, a tbs of butter, add onions, saute a bit, add cherry tomatoes (I chopped them in half) and saute for about two minutes. Add chopped basil, honey and lime juice, season with salt and pepper. Saute for a minute, then add zoodles. Fry and stir constantly for 2-3min, then add some soy sauce. Mix and taste, to see if you like it or you should add a twist of your own. Ohhh, don't forget to add parmesan. I did this in the end and I was not really careful with it, so I grated it a loot. So gooooood! (Gimme More).  :)
