Being sick at home is the worst. I get bored so fast, even though I have a bad version of a headache. So, I`ve slept for two days, which was actually very good for me and yesterday, I was already feeling a bit better, so the only logical thing was to spoil myself with something sweet. :)
But, let`s go step by step.. In the morning it was time to enjoy the morning sun, check out new issues of  the magazines and have a great healthy portion of a green smoothie. Yum! :) 
Later in the day, I felt I need some energy + I was craving for something sweet, but I had nothing at
home and since I was sick I couldn`t go to the store, so it was time for plan B. I`ve checked what I have from the ingridients at home and remembered that I saw a recipe for homemade nutella at Urška`s blog, the girl I wrote about a few days ago (check here). Ha, so I had the nutella, but that was not enough, I needed something to eat it with, so the only logical thing was to make buckwheat pancakes. It was the first time I used buckwheat flour and I loved it. I found the recipe over at DB`s blog and the pancakes were delicious! That man knows how to cook! ;)
1. GREEN SMOOTHIE:
~ banana ~
 ~ pineapple ~
~ coconut/rice milk ~
~ handful of spinach ~
Blend it & enjoy it!  ;) 
2. HOMEMADE NUTELLA
Mix together in a pan: 
- 2 large spoons of coconut oil
 - 2-3 large spoons of cacao
 - 1/2 cup of hazelnut spread
 
How to make hazelnut spread? 
Put a spoon of coconut oil in a pan, add hazelnuts and fry it until it smells good. Then mix them in a blender, together with dates that were soaked in the water for a while, almond milk, vanilla pod and a bit of a sweetener (maple syrup, honey..).
 .. and about the quantities, play a bit, add more of what you like, add some things, whatever. :) I for example didn`t had almond milk, so I`ve used the normal one and I used an extra spoon of cacao + I`ve added one vanilla sugar and I mixed the whole hazelnut spread cuz otherwise I know I wouldnt use it. 
3. BUCKWHEAT PANCAKES
- (3-4 really big pancakes, or 6 normal size)
 - 1 egg
 - 100g buckwheat flour (gluten free)
 - 2 dcl goat`s milk (I only had normal(cow) one )
 - 1 dcl of mineral water
 - 1 full spoon of tapioca flour (I only had rice flour, so I used it instead of tapioca f.)
 - a pinch of salt
 - a pinch of brown cane sugar
 - a piece of coconut butter
 - You can also add some cinnamon or grate lemon peel
 
Whisk the egg, add milk and both flours. Mix it well, so you will get a smooth mass, add a pinch of salt and sugar and in the end, just to make the mass a bit softer, add the mineral water. 
Heat up the pan and grease it, like you would wipe it with the coconut butter. Than, put a scoop of mass in a hot pan, turn it around after a while, so it will be done on both sides. 
More or less, that`s it. I guess you baked pancakes before, so you know the drill. ;)

ReplyDeletePalačinke so njami... tudi pri nas brez kozjega mleka in tapiokine moke, sem jih zadnjič pekla znova :), ampak tale Nutella... če bi imela doma lešnike, bi jo pripravila še ta hip...Poskusim prav kmalu...

Me veseli, da so ti bile palačinke všeč. Tudi jaz sem včasih uporabil kar riževo moko, če že nisem imel tapiokine.
ReplyDeleteDomača nutella pa pride tudi pri meni kmalu, saj bo z novim blenderjem gladka skoraj kot original.
Ma, odlične so, res! Bodo sigurno v kratkem spet na jedilniku. :)
DeleteJa, blender ima veliko vlogo (važič), meni ni tak fino zmiksalo in posledično ni bila tako gladka, je pa okus vseeno pravi. ;)
