| FOOD ON THE GO PROJECT | :: QUINOA GREEN SALAD △ AVOCADO SAUCE ::


Seriously? You had a doubt that I won't continue with Food On The Go Project? Oh, you. I would never let you down, but due to the lack of time in the past months there was not much going on in this area. I didn't cook that much, but it's time we get back on the track with healthy lifestyle and not because summer is here, but because I want to feel good, strong and healthy. 

What do you say? Are you with me? Should we do a challenge? Like 30 days of Food On The Go and we share what we prepare so we don't ran out of ideas. It`s always been about the support and sharing, that`s what makes challenges fun. Leave a comment if you're in! If there will be no one participating, that's ok, I will still do it, but in July! Haha, yeah, sorry, vacations are planned for the rest of the June, so I have to be realistic you know. 


So, the other day I made this delicious Quinoa Salad. It was even better the next day, so I definitely recommend you to make it a bit extra, since you'll make a mess in the kitchen anyway. Let it be worth it. 😀

QUINOA GREEN SALAD

You will need:
2 cups cooked quinoa
2 cups cherry tomatoes 
2 cups spinach leaves
1/2 cup of Avocado sauce
fresh mozzarela cheese
grilled veggies (of your choice, I used aspargus)
grilled prawns (or chicken) 

How to do it?
1. Cooked quinoa in advance, because it tastes best when it's cold, but no worries you can also cook it the same day and just leave it in the fridge for a couple of hours. I only had 1h because well, I was hungry and in a hurry. :) 
2. Toss all the ingridients together to combine and enjoy. :) 

PS: You Vegan? No problem. Use just first four ingridients + grilled veggies. ;) Easy peasy! 

AVOCADO SAUCE

You will need: 
1 avocado
1 cup packed parsley and cilantro 
1 jalapeno, ribs and seeds removed
2 cloves garlic
juice of one lime or two
1/2 cup water
1/2 cup olive oil 
1 teaspoon salt
1/2 cup pistachios (you can also use other nuts)

How to do it? 
Mix/blend (is there any other word?) together, except pistachios in a food processor. Add pistachios and mix it until smooth. It`s done, now use it. Add water if it`s too thick. ;)
